Day 18: My upside down birthday

Today's craft was done by Matt and Lucy!!!

Matt asked me a bit ago what kind of cake I wanted for my birthday.  I thought for a while and decided it had been a while since I had a pineapple upside down cake and asked for that.  Apparently, from what I was told, a box of upside down cake was impossible to find, except when you are looking for the ingredients to make it from scratch, then you can find a ton.  

But Matt was on a mission and while I was out at dinner with a few friends, he took Lucy and Dexter to the store and bought all the ingredients for a homemade cake.  When I came home, the house was smelling like sweet melting delicious brown sugar and pineapples.  Lucy was in bed but still awake and told me how as soon as the cake was done cooking, the oven would beep and then we would put it in the fridge to cool for tomorrow.  She was so excited!  

I couldn't have been more shocked and in awe that Matt and Lucy made me a "from scratch" cake.  They even used a fresh pineapple for the topping!  I feel so loved.  And shhhhh...I took a nibble out of the corner, it was AMAZING!

The recipe Matt used is here.  He said that he didn't know what cake flour was so he substituted it with Bisquik.  He also tossed in a dash of cayenne pepper to the pineapple topping.  Oh and of course, he added maraschino cherries to the center of the pineapple.
