We are back in Seattle this week. Thank gosh. We love seeing our family, but it's nice to be home. Now that we are home, we can get back to eating a little more healthy. We ate like crap while we were on vacation. Well, the food we ate wasn't crap, but we just ate out so much and so often. I can't believe I am actually saying this but I am EXCITED to cook again. I am excite to not eat out. I am excited to start eating healthy again.
This week, we will be doing easy breakfasts and lunches will probably be all the same again, but not that I have two toddlers in the house I will write out what I am making for them.

L-maybe something premade from Trader Joe's since it's shopping day and I don't have anything here in the house
D- Loaded baked potato and chicken casserole

L-cucumber and tomato salad, kids will get homemade mac and cheese and chicken
D- TACO TUESDAY!!! Black bean tacos (shhhh...don't tell Matt that these will be meatless!)

L-cucumber salad for me and the kids will get some mac and cheese and chicken
D-Turkey and veggie skillet

I am making homemade butter this week (or will be attempting it) and using the buttermilk from the homemade butter to use for the chicken. I am also going to serve fruit with dinner this week. When we were in Vegas, my grandma-in-law served fruit with almost every dinner and I really liked the addition.
Figuring out this clean eating stuff will happen eventually and I am loving the challenge. I am also happy to say that even though we ate like crazy people the last two weeks, I didn't gain much more than a pound or two but I am ready to get back on track and drop some more. Tuesday I also start training for my first 5K marathon on March 3rd (yes I realize that is only like two weeks away, but what the heck right?).

I had a bit of trouble trying to figure out what B-Oatmeal and B-Smoothie was, then it hit me....B = Breakfast......Very clever Randi my girl!!!!!
