This Week's Menu

I am working on a countdown this week, only 7 more days until I embark on a road trip with my kids to Colorado to see my best friend and hang out with some of the J12 mamas (the ladies that are on a discussion board with me that were all due with our January 2012 babies at the same time).  7 days.

7 days until I drive some where close to 3,400 miles mostly on my own.  I have a friend that should be driving from Colorado to Las Vegas with me and then my dad will be driving back with me from Las Vegas to Seattle.

It's going to be epic.

We took the kids to the pool today for a quick swim.  They had a blast.  Dexter...that dude is insane when it comes to the pool.  Not only was he all about it, again, but he was kicking and moving his arms like he was trying to do the freestyle stroke.  He was also trying to blow bubbles and would "float" on his back relaxed.  I know, I know, I have a GENIUS on my hands.  Look out.  If he would only direct this amazing talent to TALKING then we would both be a little less frustrated.

This week will be a quick simple menu since we will be out of town next week.  I know that kind of sounds backwards...we will be gone next week, so why prep light for this week?  Well I have so much else going on this week, I don't want to over complicate our meals.
