But, I am eating almost normal. Everything has to be modified to completely low fat, but I guess that is a good thing huh? I still have to remind myself to eat. I have to force myself to take another bite when I don't want to chew anymore. But I guess 15 days in the hospital mostly spent not eating will do that do you.
I'm sure I've mentioned this in a previous post...but I've lost 23 pounds through this whole process. I have a hard time recognizing myself in the mirror still some days. I've had to buy new jeans. It's weird seeing myself shrink away. It's definitely not the way I would have hoped for it to happen though, but I am going to try and take this opportunity to keep it up and stay as healthy as I can be. I am terrified of landing back in the hospital with another flair up so I am willing to do anything, even if that means never having a glass of wine again.
All I can say is that pancreatitis can suck it.
This week's menu will be light. I am actually going to a blogging conference in Salt Lake City on Thursday and coming back Sunday so I am going to plan food until I leave and then I will leave the rest up to Matt and my mother in law, who has been staying with us for the last 3 weeks helping with the kids and helping me mend.
