Turns out when I DO have a menu plan made, we eat out...a lot. We didn't eat out as much this week as we did last week, but we ate out too much. Mainly, because by the end of the day, I was exhausted. See this is one of the issues I have with healing...I get so very tired so very fast. I don't want to eat out, like I said last week, it's stressful for me to eat out. But I am just so tired.
I also went through and planned lunches last week and completely failed almost every day at preparing a lunch. So we ate out a lot then too. I failed. However, this week is a new week, I am going to try and be better.
I had a follow up appointment last Tuesday about my pancreas and the fluid build up that I am "suffering" from. I put that in quotes because, where it's not constantly painful, it's sore on my right side where all my parts are being pushed around. I don't know if it's be re-absorbed or if it's just hanging out but it's sore. Like all the time. The doctor said it could take up to a year for it to completely go away. I won't have another check up for it for another few months. I am hoping they call for another CAT scan during that time so they can check the progress on it.
Anyway, even though I am on the mend from this pancreatitis crap, I am still constantly dealing with it. Now lets see if I can succeed in a weeks worth of cooking...
Oh and today is Mother's Day! How could I forget...I wanted to give a quick shout out to my mom, my step mom and my mother-in-law...HAPPY MOTHER'S DAY!!! Sorry if I didn't call, or write...my brain has been friend basically since I was put in the hospital and I didn't really put two and two together that Mother's Day was this weekend until it was too late! I will try to be amazing next year.
In the mean time, I'll just share my menu with you because, um, that will make everything better...right?

I'm glad to see "This Week's Menu" back......It is one of my favorites....When I visited last summer, U made me some great stuff.....I really liked that Bar-B-Q chicken!!......Hang in there Kiddo, U are on the Come-Back-Trail!!

DeleteWow you posted a menu!! I love it!! This is one of the areas I struggle with most...planning food. We dine out way too much because lack of planning, and I too am sick most of the time. I sympathize with you, life is kind of hard anyway without adding feeling like crap on top of it all. Say hi to the space needle for me! I am from Bellingham WA. now living in Florida. The weather is nice, but I actually get tired of all the sunshine. I miss the overcast skies about half the time. You take care of yourself! I can't wait to read your next post!
